Day Five: Menu Fail

I was completely late for giving my test this morning. No time for breakfast. The hubs, on the other hand, had a banana along with almonds in coconut milk. He loved it (and came up with it on his own without reading any of my paleo materials).

For lunch I made egg salad with 2 hardboiled eggs, 1 avocado, some lemon juice, and salt and pepper. Served on a salad of romaine and tomatoes. Very nice.

Dinner, on the other hand, was not so successful. We bought some thin pork chops this weekend, intending to have them for breakfast. Instead, the hubs grilled them and accidentally grilled them a little too long. He made a salad of tomatoes, onions, and artichoke hearts with lime juice. He’s a great cook with a recipe but would probably be kicked off of Top Chef (his words). No biggie, though. We stayed on the diet. It’s only food, right? How many times have I resorted to crappy pantry cooking of ramen noodles and refried beans from a can? At least this was good for us and fresh!
