Day 13!

We’ve gone and had too much. Taco night… Paleo style.

I checked the back of a Taco Bell seasoning packet at the store yesterday, and the first ingredient was wheat! It also had some things in it that I couldn’t identify, so I decided that I’d just make my own from spices I have at my house. We had some grass-fed ground chuck in the fridge, and so we had taco meat on lettuce with tomatoes and fresh guacamole. Here’s the recipe if you’re interested!

Taco Seasoning
1 teaspoon garlic salt
1 teaspoon ground cumin
1 teaspoon paprika (I always use Hungarian Hot Paprika)
1 teaspoon chili powder
Cayenne to taste

I browned 1 pound of ground chuck with half an onion, drained it, and then added the taco seasoning mix plus 1/2 to 3/4 cup of water. Let this simmer for about 10 minutes.

We served a helping of ground beef on lettuce with a big dollop of guacamole. I think next time we’ll use lettuce as the taco shells, and make taco salads using flank steak or chicken. The ground beef was a little difficult to pick up with a fork when there aren’t tortillas around!
