So, just a quick update at the Bananafish Disco:
– Today is day 9 of not smoking
– About to kick this cold
– My little boo found a home
I’ve learned that roasting vegetables is a really good way to have a side dish without a lot of effort on work days. Since I had a relapse yesterday of my cold and pretty much stayed in the bed all day, I wasn’t much on cooking today. Luckily, I had some sweet potatoes, onions, garlic, and thyme that I roasted for about an hour with a little olive oil, salt, and pepper. My husband cooked up some pork chops with garlic, thyme, salt, and pepper. I think we went overboard by using the same herb on both parts of dinner, but hey, it tasted good. Since he cooked all of them, I can take a pork chop and some roasted veggies to work tomorrow and hopefully use my lunch break to go for a walk.
I found my little boo a home this week. Oh, I grew so attached to him! He hit the dog life jackpot, though, and I’m so happy that he will have a good life on a farm with horses, a schnauzer friend, and grandchildren. His name is now Archie (for Archie Manning, of course). I cried and cried after I parted with him, and I’ve decided I can never foster another animal as it will kill me to let them go.
