Crawfish and “Noodles”

It’s the most wonderful time of the year.  Crawfish season!  I will be a happy girl every weekend (well, maybe not every weekend) until April or when they run out.  What could be better than hot, spicy, steamy crawfish and sausage from the Crawdad Hole in Water Valley?  Nothing.  Nothing at all.

I’ve talked about the Crawdad Hole before.  It’s the best.  Surprisingly, these crawdads were a good size for so early in the season.  They are seasoned perfectly of course.  Hubs got the shrimp, also the bomb.  As long as I stay away from the corn, pretty much everything involved in a crawfish boil is paleo.  The sausage at the Crawdad Hole is sourced fairly locally (within 50 miles, I believe – how close does a product have to be to be local?).  Crawdads are just meat, water, and spices.  I’m getting hungry writing this.

Switching gears to cooking: My husband has never been a fan of spaghetti squash.  I saw a recipe come across my Facebook feed recently and thought he would like it.  It was so good.  He said that it was the first time he had ever liked spaghetti squash, which is a real feat since I’ve made some version of spaghetti squash-as-pasta about a billion times.

I used the Primalist’s Garlic and Goat Cheese Spaghetti Squash recipe.  So good, so garlicky, so goat cheesy!  The only thing I would change is to add about 1/2 cup of olive oil instead of 3/4 cup.  It seemed really oily to me.  There is a LOT of cheese in it, and it is really rich.  I served it as a side, but I’ve been able to eat it for leftovers at lunch for two days just by itself because it is so filling.

I will have you know that I am still without cigarettes, and it has been a month!  Well… almost… I smoked one, last Friday night.  And it made me sick.  Remember when I said that alcohol leads to poor food choices (duh)?  It also leads to sneaking cigarettes.  If anything is a gateway drug, alcohol is.

Speaking of alcohol, Mardi Gras is coming up soon.  I was browsing a New Orleans bakery’s website today and was salivating at the King Cakes.  I want one.  I want one so bad!  BUT, I am going to try to make one with primal or paleo ingredients.  We’ll see what happens.  Laissez les bon temps rouler.
